Suzhen was torn from the page of Chinese folktales and into our culinary imaginations. The riveting narrative of Lady White Snake is a story of persistence, love and gratitude. A snake spirit who has meditated and practised for a thousand years to transform herself into a human form to repay the kindness of a future lover who once saved her when she was a snake. Suzhen is a seamless balancing act of opposites that smoothly draws you into its elegant and romantic world. A world that almost incites visions of sepia-tinted daguerreotype photographs of flowers.

The shy tartness and a fruity expression of Raspberry Inpiration mousse, paired with caramelised pistachios, speckled inside Suzhen like beads of kisses from a lover. At her belly, a creamy and voluptuous Pistachio cremeux, sensually swaying to her snake hisses, hypnotising you to submission and obedience. She licks the air to taste danger, but there's none. Only love. And that's what Suzhen is: the persistent desire to love and be loved.
