This Yam-y marriage of Asian traditions and French techniques start with the hard roasting of peanut until the fragrant oils swirl into the air. Cracked Caramelised Peanuts decorate the Dacquoise while sweet yams are steamed and pounded to a smooth paste, mixing it with coconut milk before whipping it to smooth buttercream. Then comes the centre, a velvety yam custard gives the cake structure and richness. Letting you go with a craving for the next bite.
